If you have a family Christmas dinner in mind, a well-complete table at Christmas in Mexico includes a large number of Christmas dishes. From stuffed turkeys, pork leg, romeritos; even typical drinks such as fruit punch or rum pope. But the quintessential Christmas sweet par excellence is this delicious Christmas cake, easy to prepare.
Ingredients
1/2 cup butter
1/2 cup of lard
1 cup brown sugar
1 1/4 cups (whole grain) of “whole grain” flour
1 1/4 cups self-rising flour
1 teaspoon baking powder
1/4 teaspoon nutmeg
1 tablespoon molasses
2 pounds of dried fruit
1 lemon in juice
1 orange juice
1/4 cup sherry
1 tablespoon brandy
1 tablespoon Almond milk
Preparation
Preheat the oven to 325 degrees F.
In a bowl, with a spatula, beat the butter and shortening together until they become a cream.
Add the sugar and continue creaming. Add the eggs little by little and mix until well incorporated.
Then add each ingredient; one at a time and mix.
Grease and flour a bread pan with butter and sprinkle with flour so that the bread does not stick to it; and pour the mixture into the previously greased mold.
Bake for about 20 minutes.
Let cool in the same mold. Then take it out and wrap it in plastic and let it marinate for a few days.
