The first recorded mention of cheesecake was when it was served to athletes during the first Olympic Games held in 776 BC. Centuries later, cheesecake appeared in the United States brought by immigrants.

If you ask a New Yorker, the only true cheesecake makers and connoisseurs are in New York.

New York Style Cheesecake has its own story. Arnold Reuben Jr., owner of the legendary Turf restaurant at 49th and Broadway in New York City and a descendant of immigrants from Germany, claimed that his family developed the city's first cream cheese cake recipe, the truth is that his recipe was So popular in the city that it spread around the world to the point where it was awarded the Gold Medal at the 1929 World's Fair.

The superior qualities that make Reubens' classic New York-style cheesecake is a graham cracker crust, a creamy texture, and a distinctive lemon flavor that is firm yet light in density.

Here's the classic New York-style cheesecake recipe.

Classic New York Cheesecake Recipe

Crust ingredients:

Coat the 10-inch springform pan tightly with cooking spray.

1 1/2 cups graham cracker crumbs, otherwise Mary-type crackers

5 tbsp butter

1 tsp honey

1/4 cup of sugar

Ingredients of the filling:

5 8-ounce bars of cream cheese philadelphia, at room temperature

2 tablespoons white baking flour

1 tablespoon confectioners' sugar

1 1/2 cups sugar

zest of 1 lemon

1/2 teaspoon orange liqueur

3/4 teaspoon vanilla

2 yolks organic egg at room temperature

5 eggs at room temperature

Instructions

Prepare the crust

We crush the cookies with our hands until they are well mixed and the crumbs appear moist. Pour into a removable pastry mold. Using your hands, spread the mixture over the bottom and pat firmly until you have a uniform cookie base.

The filling

Preheat oven to 400 degrees.

Place the first five ingredients in a large bowl and beat over high heat until completely mixed.

Add the vanilla and 2 yolks, and beat again. Add eggs, one at a time, beating well.

Pour into the pan prepared with the crust. The batter or filling will fill the pan to the brim.

Bake for 10 minutes. The top will be gold. Lower the oven temperature to 200 degrees and bake for 35 to 45 minutes or until the top is golden brown, and when the cake feels fluffy to the touch, insert a wooden toothpick and test it comes out clean.

Cool to room temperature. Serve immediately or cover and refrigerate.

Bring to room temperature before serving.

Some like to make variations or additions to the recipe, with an additional layer of strawberry jam or some other flavors, but it is certainly no longer the original recipe that New Yorkers boast so much about.

For me, there is no better accompaniment to cheesecake than a delicious coffee cappuccino type.
