Gluten-Free Recipes: Orange and Poppy Seed Cupcakes

This recipe is simple to make, and also easy to digest since it does not contain gluten.

Even when you are not celiac, this recipe is not only healthy but beneficial to your body, since thanks to poppy seeds it helps with intestinal transit in a natural way.

 Ingredients:

1 cup of almond flour

½ cup tapioca flour

½ cup of rice flour

½ tsp xanthan gum

1 tbsp baking powder

1 tsp baking soda

Peel of an orange

½ cup of orange juice

One lemon's juice

¼ teaspoon pink salt

½ cup melted butter

2 eggs

½ tsp natural vanilla extract

2 tbsp poppy seeds

For the bitumen

190 g cream cheese

20 butter g

50g icing sugar

the zest of a lemon

Preparation:

Preheat the oven to 180 ºC

In the blender, beat the eggs with the sugar until they are white, add the butter melted and at the end the juice of the lemon and orange.

In another bowl add all the powders and flours. pass 2 times through a strainer to integrate all the flours well and break up the lumps.

Mix the 2 preparations until they form a homogeneous mixture.

Add the poppy seeds.

Bake in a muffin tin at 180ºC for 25 min.
