Potato Omelette: Healthy Dinner

Ingredients

For two people

  • 4 potato medium
  • 1 large onion Fresh Parsley Sprig
  • 6 organic egg whites
  • Celtic salt to taste
  • Extra virgin olive oil

Instructions.

Did you know that you can use the steamer to cook your potatoes?

Yes, you can cut the potatoes into slices after peeling and place them in a water bath in your steamer for about 10 minutes to cook the potatoes without losing consistency or nutrients.

Proceed to cut the onion and put it in the steamer too.

Alternatively, if you don't have steamer, you can use the microwave for about 8 minutes depending on the power of your appliance to cook the potatoes together with the onion.

In a bowl, mix the onion, potatoes, and eggs, mixing well until a homogeneous consistency is achieved. Add the chopped fresh parsley and salt to taste.

At this stage you can add other spices such as ground pepper; or if you get creative, some pieces of Serrano ham.

In frying pan molten iron over high heat, add a dash of extra virgin olive oil that gives a unique flavor to food.

Add the previous mixture and wait for the bottom of the tortilla to start to set and brown without letting it burn.

To turn you must allow it to have cooked to the point that the potatoes, the egg or the other ingredients have at least solidified; Well, when you turn around, you can make a mess.

To flip one of the most common techniques is to use another plate, flip the tortilla from the pan to the plate and then slide the uncooked side back into the pan. We do not recommend that you try to flip the tortilla in the air like a pancake, because it is NOT a pancake.

If you're still unsure about turning the tortilla, use a large spatula to help you.

When the other side is browned, proceed to serve.

Preparing dinner in a light and healthy way is not difficult. You can accompany the tortilla with a salad or if you are using the tortilla as a cover, with some slices of chorizo.

Remember that all in balance, a few pieces of tortilla are not bad for a dinner that allows you to fall asleep without tossing and turning.
