One of the main dishes of the December festivities are romeritos.

This sample of Mexican cuisine is usually accompanied at Christmas dinner with mole, nopales, potatoes and in some cases shrimp. But, how much do you know about this incredible food?

The scientific name for romeritos is Suaeda torreyana and it belongs to the Chenopodiaceae plant family of which quelites are also part. They were considered by aztecs as a culinary treasure for its high nutritional content and the ease of obtaining them before weeding the milpa. In addition, among the nutrients offered by romeritos are nitrogen, proteins and amino acids. Its nutritional contribution is comparable to that of spinach, chard and watercress.

They are an example of the biodiversity that exists in Mexico and their preparation saves years of history and culture. The main romeritos-producing communities are located in Mexico City, among them San Andrés Mixquic, San Nicolás Tetelco and San Juan Ixtayopan in the Tláhuac Delegation and San Gregorio Atlapulco, in Xochimilco.
