Ingredients

1 yolk org eggunique

2 teaspoons lemon juice

1/4 teaspoon Dijon mustard

1/4 cup oil avocado

1 / 4 cup olive oil

1/4 teaspoon celtic salt unrefined

1/4 teaspoon of white pepper

5 cups leaves spinach fresh chopped

1 cup mushrooms, chopped

1/4 cup tofu

2 garlic cloves, minced

2 onions, chopped

1/2 teaspoon unrefined sea salt

1/4 teaspoon freshly ground black pepper

4 organic chicken breasts without skin or bone

Preparation

Preheat the oven to 375 degrees F (190 degrees C).

Make the Paleo-style mayonnaise: Combine the egg, lemon juice, and mustard in a blender and blend until foamy.

Add the avocado oil and olive oil, drop by drop, until smooth and creamy.

Season with 1/4 teaspoon of salt and white pepper.

In an airtight container and refrigerate for 30 minutes.

Combine raw spinach, mushrooms, paleo mayo, tofu, garlic, onion, salt, and pepper in a bowl.

Pour the spinach mixture over the chicken breasts, roll out and secure with toothpicks.

Place the baked stuffed chicken breasts in a shallow bowl.

Bake for 1 hour, or until the chicken is no longer pink in the center and the juices run clear.
